Climate
After a rather wet winter, there was plenty of rain in the spring of that year too. As a result the plants grew both vigorously and rapidly.
Both rainfall and temperatures were average for the months of May and June, whereas the summer season was somewhat different from
the average for that time of year. July saw temperatures a little below the norm, whereas August and September were characterized by
torrid heat, with temperatures reaching as much as 40°C, with minimum fluctuations in day and nighttime temperatures, and almost
no rainfall.
All these factors contributed in producing a sudden increase in the sugar content, and a drop in the average weight of the grapes.
As a result, there was a drop in production of around 30%.

Vinification
The vineyards are at an altitude of around 300 metres, about 18 years old, and are all situated within the DOC wine production
area of Assisi. The soil is mainly shallow, of medium consistency,  with a high level of skeletal deposits deriving from the dissolving
of the calcareous rock of Mount Subasio.
The harvesting of Grechetto, which is used for this wine, started in mid-September, with slightly more overripe grapes than usual.
The grapes were placed to dry in small trays in a thermo-controlled environment for approximately two months, until the required
sugar content was reached.
The grapes are then pressed and allowed to macerate at a temperature of 4°C for about 6 hours.
Alcoholic fermentation occurs in stainless steel containers at a controlled temperature until the required alcohol content and
consequent residual sugar level are reached.
There is then a period of approximately two years’ ageing in third passage barrique.

Alcohol played: 13% vol. - Total Acidity: 5,60 g/l - Residual sugar: 180 g/l

Tasting notes:
From the first tasting notes, the wine’s intense yellow colour with bright golden reflections stands out. Sweet honey hints to the nose, with vanilla and candid fruits, and a decisive mineral finish, typical of Grechetto.
